Well, according to my strategy guide, they're simply called eyeball monsters. I don't know how canonically correct that is, though.

Depending on the origin of your strategy guide, it may or may not be canonical. If it's an official licensed Nintendo product (or affiliated with Nintendo in some way rather than being from a "rogue" publisher) it might be considered canonical. Either way, it's the only source for naming we got, I think. Better than some made-up name.
